This recipe comes from my friend and fellow mom Amber. Thanks Amber!

Makes a dozen.

1 stick butter, room temp
1 cup granulated sugar
2 large eggs
1.25 cups rice flour
1 tsp baking soda
1 tsp salt
1 cup mashed very ripe bananas
0.5 cup sour cream
1 tsp vanilla
0.5 cup chopped walnuts/pecans

Preheat over to 425.  Cream butter and sugar, add eggs and beat to incorporate

Whisk together flour, soda, salt. Add to butter mixture, mix until
just combined.  Add bananas, sour cream, vanilla, mix to combine.  Add
nuts.  Pour into muffin pan (I use papers to prevent sticking issues).

Place in oven, immediately turn oven down to 375, bake for 20 minutes.
I broil for a sec at the end to brown the tops.
