This vinaigrette is great with any combination of salad ingredients. I use it year round and even dress hot vegetable sides with it. Very versatile.

serves 6-8 guests

1/4 cup Red Wine Vinegar

2-3 Tbsp Mango Chutney

1 clove Garlic, minced

2 Tbsp Dijon Mustard

2 tsp Sugar

1/3-1/4 cup Olive Oil

Salt and Fresh ground Pepper to taste

Mix all ingredients except salt and pepper into a glass jar with fitted lid. Shake with lid on. Then add salt and pepper as needed. Let sit at room temperature for 30 minutes before using. Can sit at room temperature for one week. Use as desired.
