Orange Fennel and White Onion Salad- marinated in its own juices and lightly salted. Kalamata olive garnish

Pork Pibil- thinly sliced pork loin and onion marinated in an anchiote-orange vinaigrette and baked in banana leaves
Mango Salsa- fresh salsa of diced mango, white onion, red bell pepper and cilantro
Plantains- caramelized in unsalted butter
Green beans- sautéed in browned butter and tossed with toasted pine nuts

Pomegranate Gelato with dark fudge sauce – a dreamy concoction of cream and pomegranate frozen into a gelato and topped with dark chocolate fudge
